Ingredients

How to make it

  • Preheat oven to 350 degrees F.
  • Mix flour and nuts OR coconut (our family prefers nuts) and set aside.
  • In a heavy saucepan combine sugar, syrup and butter or margarine. (Mom used margarine but butter is better.) Bring to a boil over medium heat stirring constantly.
  • Remove from heat and stir in flour then vanilla. Note: I don't transfer this to a bowl, but keep it in the warm saucepan so it's easier to work with.
  • Drop by scant teaspoonfuls on foil- or parchment paper-covered baking sheet at least 3" apart.
  • Notes: 1. The foil or parchment paper is essential Do NOT bake these on a greased baking sheet because they will STICK and be impossible to get off the sheet. 2. The 3" spacing is very important as these cookies spread quite a lot and take on a lacy appearance.
  • Place sheet in preheated oven and bake for 8-10 minutes.
  • Remove from oven. Cool slightly, until the cookies are cool enough to handle then peel off foil or slide off parchment paper.
  • Place on absorbent paper to fully cool.

Thank-you for sharing your Mom's recipe.
I can only imagine the fond memories that rush forward when you make these, having her there in the kitchen with you.
    ~anyway~
That's how I feel when I pull out one of my Grandma's recipe in her handwriting, holding my breath each and everytime hoping it will turn out like hers did.
    Kind Regards
    Joyce
