How to make it

  • Prep:
  • Combine sweet potatoes, butter, orange juice or milk, salt, and 1/3 cup of marshmallow creme. Beat in egg. Pile sweet potatoes in a lightly buttered baking dish (9" round or square glass works best if available). Bake at 400 for 25 minutes. Top with mini marshmallows and brown under broiler til golden (keep oven door cracked open and watch carefully to prevent fire!!)

    I made this for dinner today - and in spite of all of your great ideas for substitutes, I changed my mind and used marshmallow creme in the souffle. I also spooned dollops of it on top about 5 mins before the souffle was done instead of using the mini-marshmallows and the scary broiler! The souffle has a delightful texture and very comforting taste. Thanks for the great recipe!
