  • 1. Cook the lentils until tender
  • 2. Drizzle the slices of squash with oil, season, and roast at 170C for 30 minutes
  • 3. Mix together the spinach and lentils with the roasted squash. Dress with cheese, croutons and a drizzle of balsamic.
