Ingredients
  • 1 package chow mein noodles or vermicelli
  • a few sliced whole scallions
  • big handful of sesame seeds (toasted)
  • 1 cup or so of shelled edamame
  • 3 ounces or so of raw drained extra firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp hot chili sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic or 1 clove fresh
  • 1 tbsp peanut or canola oil

Directions
  1. Cook noodles per package directions
  2. meanwhile- toast sesame seeds in a small pan over medium heat
  3. drain and cold rinse noodles
  4. mix wet ingredients with sesame seeds
  5. pour sauce over noodles until well coated
  6. finally add the tofu and edamame
  7. This dish tastes even better the next day and leftover chicken could probably be used in place of tofu.

Alterations


Add salad shrimp, cucumbers, julienne & bell peppers, julienne for a little variety

I also use 1Tbsp of fish sauce in the dressing
