Cold Thai Noodle Salad

- 1 package chow mein noodles or vermicelli shopping list
- a few sliced whole scallions shopping list
- big handful of sesame seeds (toasted) shopping list
- 1 cup or so of shelled edamame shopping list
- 3 ounces or so of raw drained extra firm tofu shopping list
- 2 tbsp soy sauce shopping list
- 1 tbsp hot chili sauce shopping list
- 1 tbsp sesame oil shopping list
- 1 tbsp rice vinegar shopping list
- 1 tsp minced garlic or 1 clove fresh shopping list
- 1 tbsp peanut or canola oil shopping list
How to make it
- Cook noodles per package directions
- meanwhile- toast sesame seeds in a small pan over medium heat
- drain and cold rinse noodles
- mix wet ingredients with sesame seeds
- pour sauce over noodles until well coated
- finally add the tofu and edamame
- This dish tastes even better the next day and leftover chicken could probably be used in place of tofu.
