Cheesy Zucchini Casserole

- 2 lbs med zucchini thinly sliced shopping list
- 1 small can sliced mushrooms and juice shopping list
- 1 T butter or margarine melted shopping list
- 2 eggs separated shopping list
- 16 oz sour cream shopping list
- 2 T flour shopping list
- 1 1/2 c shredded cheddar (I use whole bag) shopping list
- 6 slices bacon cooked and crumbled ( I use whole lb addicted!) shopping list
How to make it
- Combine zucchini mushrooms and butter in a large skillet
- Cook over med heat until tender, stir occasionally
- Beat egg yolks
- Add sour cream and flour stir till blended
- Beat egg whites until stiff and fold into sour cream mixture
- Layer half the zucchini, sour cream mix, bacon, and cheese in a 8x12
- Repeat layers
- Bake for 30 minutes at 325
- This is great by itself or serve with noodles
