How to make it

  • Core and scoop seeds from tomatoes. Put tomatoes upside down on paper towels & refrigerate.
  • Prepare rice using package directions.
  • Lightly oil a frying pan, break apart sausage and brown; add onion to sausage and cook briefly.
  • Drain sausage mixture and add to rice.
  • Remove tomatoes from refrigerator, lightly salt cavities and stuff with rice mixture. Garnish with a green pepper strip.
