Stuffed Tomatoes

- 48 small tomatoes (not cherry type - I used camparis but tested the recipe first with small romas) shopping list
- 1 box yellow rice (I used Goya) shopping list
- 1 lb sweet Italian sausage (bulk or patties) shopping list
- 1 small onion diced fine shopping list
- 1 bell pepper julienned shopping list
- olive oil or butter shopping list
How to make it
- Core and scoop seeds from tomatoes. Put tomatoes upside down on paper towels & refrigerate.
- Prepare rice using package directions.
- Lightly oil a frying pan, break apart sausage and brown; add onion to sausage and cook briefly.
- Drain sausage mixture and add to rice.
- Remove tomatoes from refrigerator, lightly salt cavities and stuff with rice mixture. Garnish with a green pepper strip.
