How to make it

  • Melt butter over medium heat in a large heavy pan. Add onions, add salt & pepper to taste, then stir. After a minute, turn heat down to medium-low. Partially cover pan and let onions cook, stir occasionally, until they are caramel in color, about 30-35 minutes or so. Remove from heat, set aside.
  • Preheat oven to 400 degrees. On a floured surface, roll dough into a 8x16 rectangle (you can make it round if you like). Transfer to a baking sheet. Bake until lightly browned, about 10 minutes. Remove from oven & set aside.
  • Sprinkle onions & thyme in even layer over the crust. Top with Gruyere. Return to oven until heated through and edges are a golden brown, about 10 to 15 minutes.
