Artichoke-chicken Salad

When I'm not in the mood to cook, this is something that I can put together really quickly. If you are using canned artichoke heats, they must be drained thoroughly to remove as much excess liquid as possible. Read more If you choose marinated artichokes, I would drain the oil away. Good quality Italian grilled artichoke hearts are great in this. I like this with a chewy Italian country bread. A little garlic is also very nice here--fresh, of course. See less
Ingredients
- 1/2 lb artichoke hearts, depending on how big they are, halved or quartered, drained shopping list
- 1/3 cup capers shopping list
- 1/2 roasted chicken breast,, cubed shopping list
- 1/2 Tbsp olive oil shopping list
- 1/4 tsp dried oregano leaves shopping list
- salt and pepper to taste shopping list
How to make it
- Combine all ingredients in a bowl, mix thoroughly.
