Marlboro Skillet Potatoes

- 1/4 cup bacon fat or oil, divided shopping list
- 4 cups thinly sliced raw potatoes (no need to peel) shopping list
- 1 med onion, thinly sliced shopping list
- 1 tsp salt shopping list
- 1/8 tsp cracked pepper shopping list
- 1/2 tsp rubbed dried sage shopping list
- 1 tsp dried parsley flakes, optional shopping list
How to make it
- Heat half the bacon fat in a heavy skillet over low-medium heat; add potatoes and onion. Sprinkle with part of the seasonings; cover pan and cook about 15 minutes.
- Lift and turn potatoes, sprinkling with remaining seasonings. Cover and cook 15 minutes more or until done. Turn or stir potatoes once or twice during last 10 minutes so the cook evenly. Add bacon fat or oil if needed.
