How to make it

  • In large bowl, with mixer, cream butter and sugar until fluffy
  • Add eggs one at a time, blending quickly after each addition
  • In large bowl whisk flour, baking powder, baking soda, salt
  • Add flour mixture, alternately with buttermilk, blending well
  • Add flavorings, blending
  • Pour into 2 well-greased, 8-9 " floured round cake pans
  • Bake at 350 degrees until layers shrink from the sides, and a toothpick inserted in the middle comes out clean, about 25-30 minutes
  • Remove from oven, cool about 10 minutes in pan
  • SEVEN MINUTE ICING
  • Place sugar, water, egg white in top of a double boiler
  • With an electric mixer, start beating for 7 minutes
  • Then add 1 heaping cup of marshmallows
  • Spread between cake layers, and on top of cake, covering sides
  • Beautiful and so fluffy
