Glorious Layered Cake With 7 Minute Icing

- 1 stick softened butter * shopping list
- 1-1/2 cups granulated sugar shopping list
- 2 eggs shopping list
- 2-1/4 cups sifted cake flour shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1 cup buttermilk shopping list
- 1 teaspoon pure vanilla extract shopping list
- 1/4 teaspoon , pure almond extract shopping list
- 1/4 teaspoon lemon extract shopping list
- 1/4 teaspoon orange extract shopping list
- *NOTE: orginal recipe stated that 1/4 cup Crisco, 1/4 cup butter could be used shopping list
- SEVEN MINUTE icing shopping list
- 7/8 cup granulated sugar shopping list
- 3 tablespoons water shopping list
- 1 egg white shopping list
- 1 heaping cup of miniature marshmallows shopping list
How to make it
- In large bowl, with mixer, cream butter and sugar until fluffy
- Add eggs one at a time, blending quickly after each addition
- In large bowl whisk flour, baking powder, baking soda, salt
- Add flour mixture, alternately with buttermilk, blending well
- Add flavorings, blending
- Pour into 2 well-greased, 8-9 " floured round cake pans
- Bake at 350 degrees until layers shrink from the sides, and a toothpick inserted in the middle comes out clean, about 25-30 minutes
- Remove from oven, cool about 10 minutes in pan
- SEVEN MINUTE ICING
- Place sugar, water, egg white in top of a double boiler
- With an electric mixer, start beating for 7 minutes
- Then add 1 heaping cup of marshmallows
- Spread between cake layers, and on top of cake, covering sides
- Beautiful and so fluffy
