- (Serves 6) shopping list
- * 1 chicken cut into parts shopping list
- * 1 medium onion – diced shopping list
- * 6 garlic cloves – minced shopping list
- * 1/2 cup Shitake, Crimini or button mushrooms – sliced shopping list
- * 1 large red bell pepper, diced shopping list
- * 1 28 oz. can organic diced tomatoes shopping list
- * 1 cup dry red wine shopping list
- * 3/4 cup organic chicken broth shopping list
- * 1 6 oz can tomato paste shopping list
- * 3 tablespoons fresh rosemary – minced shopping list
- * 1 tablespoon fresh thyme – minced shopping list
- * 1 teaspoon fresh sage shopping list
- * 1/2 teaspoon dry oregano shopping list
- * 2 bay leaves shopping list
- * sea salt and ground white pepper to taste shopping list
- * 2 tablespoons sugar shopping list
- * 2 tablespoons extra virgin organic olive oil shopping list
- * parmesan cheese shopping list
- * parsley shopping list
- * pasta shopping list
How to make it
- Wash and pat dry chicken.
- Salt and pepper the chicken.
- Heat olive oil in a large deep skillet at medium high heat and sauté chicken parts for 7 minutes on each side or until browned. Remove chicken and set aside.
- Sauté onion, garlic, mushrooms, bell pepper and remaining herbs for about 5 minutes.
- Add the wine and simmer until reduced by half, about 3 minutes.
- Add the sugar and tomatoes with their juice, the broth and tomato paste.
- Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 1 hr. Garnish with Parmesan cheese and parsley.
- Serve over pasta.
