How to make it

  • Boil potatoes in salted water to cover about 20 minutes. Drain potatoes and mash well, adding salt, black pepper, cayenne pepper, onion, and eggs; mix well.
  • Shape into cakes about 2-inches in diameter and 1/2-inch thick; roll in flour.
  • Place in refrigerator overnight.
  • Re-dust with flour; fry in 1/2-inch oil in a nonstick skillet turning once until brown on each side.
  • Makes 24 cakes
