Cajun Potato Cakes

- 5 pounds red potatoes, peeled and chopped shopping list
- salt, black pepper, and cayenne pepper, to taste shopping list
- 1 onion, grated shopping list
- 2 eggs shopping list
- flour shopping list
- oil for frying shopping list
How to make it
- Boil potatoes in salted water to cover about 20 minutes. Drain potatoes and mash well, adding salt, black pepper, cayenne pepper, onion, and eggs; mix well.
- Shape into cakes about 2-inches in diameter and 1/2-inch thick; roll in flour.
- Place in refrigerator overnight.
- Re-dust with flour; fry in 1/2-inch oil in a nonstick skillet turning once until brown on each side.
- Makes 24 cakes
