Watercress Soup

- 3 large leeks, chopped shopping list
- 2 onions, sliced shopping list
- 1 garlic clove, crushed shopping list
- 1/4 cup of butter shopping list
- 4 potatoes thinly sliced shopping list
- 6 cups of chicken stock shopping list
- 2 bunches of watercress, stems removed shopping list
- OR 1 bunch of sorrel, stems removed, coaresly chopped shopping list
- 1 cup of milk shopping list
- 1/2 cup of heavy cream shopping list
- salt and pepper to taste shopping list
- 2 tablespoons of butter shopping list
How to make it
- In a kettle, saute leeks, onions and garlic in the butter until soft.
- Add potatoes and 4 cups of the stock and simmer 15 minutes.
- Stir in chopped watercress or sorrel, reserving 1/2 cup. Simmer for another 20 minutes. Puree soup in blender.
- Add two cups of broth to puree, stir in milk and cream and reserved watercress.
- Simmer until heated through.
- Adjust seasoning with salt and pepper. Swirl in butter.
- Serve in heated soup bowls.
