Watercress Soup Recipe
A favorite soup made with watercress. An alternative green would be sorrel. Mrs. Swanson made sorrel soup her signature soup at the Wine Bar in the early 80's. It is addictive.

Ingredients
  • 3 large leeks, chopped
  • 2 onions, sliced
  • 1 garlic clove, crushed
  • 1/4 cup of butter
  • 4 potatoes thinly sliced
  • 6 cups of chicken stock
  • 2 bunches of watercress, stems removed
  • OR 1 bunch of sorrel, stems removed, coaresly chopped
  • 1 cup of milk
  • 1/2 cup of heavy cream
  • salt and pepper to taste
  • 2 tablespoons of butter

Directions
  1. In a kettle, saute leeks, onions and garlic in the butter until soft.
  2. Add potatoes and 4 cups of the stock and simmer 15 minutes.
  3. Stir in chopped watercress or sorrel, reserving 1/2 cup. Simmer for another 20 minutes. Puree soup in blender.
  4. Add two cups of broth to puree, stir in milk and cream and reserved watercress.
  5. Simmer until heated through.
  6. Adjust seasoning with salt and pepper. Swirl in butter.
  7. Serve in heated soup bowls.
