How to make it

  • Pre-heat oven to 400
  • Combine first 7 ingredients;marinate at room temperature 30 mins.
  • Pour marinade into a 13x9" baking dish. Heat large skillet over med-high heat. Add chicken;cook 3 mins on each side or till browned.
  • Arrange chicken and onions in dish;sprinkle with salt and pepper. Top with olives and lemon halves. Bake at 400 for 35 mins.
  • Remove chicken and onions from dish.;keep warm. Strain sauce over a saucepan,reserving solids.
  • Bring to a boil;cook 3 mins or till slightly thick. Stir in olives and garlic;serve with chicken mixture. Top with parsley

    SOOOOOO delicious! This has to be one of the best chicken entrees I've ever made. Did you create this recipe? I did only one thing different than the written recipe and that was that I removed the chicken from the pan after baking and then boiled the glaze with the olives and onions in it. Then I returned the chicken and coated it with the thick glaze before serving. Next time I make this, I think I'll saute the onions when I brown the chicken so they have a little extra caramelization. I used no lemon halves because I didn't have any... Thank you for the fantastic recipe!

    I'm going to try this using boneless, skinless chicken so I'm hoping it will turn out as delicious as the recipe you've posted sounds...
