How to make it

  • Preheat oven to 350 degrees.
  • Using a large, oven-safe skillet start with the oil ( I love making this in a big cast iron skillet). Layer the bottom of the pan with the beef, followed by the corn and carrots.
  • Spoon the mashed potatoes on top and spread them out to cover the bottom layers. Top with the cheese, if desired, salt, and pepper.
  • Bake for 35-45 minutes or until top is browned and cheese is bubbly.
  • Let stand for 10-15 minutes before serving.
  • Variation:
  • Mix a little bit of brown gravy with the beef before putting it in the bottom of the pan.

    This sounds good. I would probably use some Colby jack shredded cheese, but would defiantly add cheese.
