Shepherd's Pie

- 3 lbs beef (you can use hamburger or just whatever you have leftover) shopping list
- 3 c mashed potatoes (you can make them fresh or use leftovers) shopping list
- 1 can or 1 bag (frozen) corn shopping list
- 1 can or 1 bag (frozen) carrots shopping list
- salt and pepper to taste shopping list
- 2 T oil shopping list
- Optional: 1 c Shredded cheese, any variety shopping list
How to make it
- Preheat oven to 350 degrees.
- Using a large, oven-safe skillet start with the oil ( I love making this in a big cast iron skillet). Layer the bottom of the pan with the beef, followed by the corn and carrots.
- Spoon the mashed potatoes on top and spread them out to cover the bottom layers. Top with the cheese, if desired, salt, and pepper.
- Bake for 35-45 minutes or until top is browned and cheese is bubbly.
- Let stand for 10-15 minutes before serving.
- Variation:
- Mix a little bit of brown gravy with the beef before putting it in the bottom of the pan.
