Gnocchi Bakes

- 2 x 500g packets fresh gnocchi shopping list
- 1 tblsp olive oil shopping list
- 2 cloves garlic, finely chopped shopping list
- 400g can tomato puree shopping list
- 2 tsps caster sugar shopping list
- 1 cup bottled roasted capsicum salsa shopping list
- 1 tblsp chopped fresh oregano shopping list
- salt and pepper to taste shopping list
- 180g tub baby bocconcini, drained and sliced shopping list
- Extra oregano to garnish shopping list
- Salad to serve shopping list
How to make it
- Preheat oven to 200 degrees celcius
- Cook gnocchi in a large pan of boiling salted water for 3 minutes, or until tender. Drain well. Spoon hot gnocchi into six greased ovenproof dishes. Place on an oven tray.
- Heat oil in a large frying pan. Add garlic & cook until soft. Stir in puree, sugar and salsa. Bring to boil. Simmer uncovered for 5 minutes, or until sauce is slightly thickened. Stir in oregano and season with salt/pepper.
- Spoon tomato mixture over gnocchi in dishes. Spread bocconcini over tops.
- Cook uncovered in a hot oven for 20 minutes, or until tops are golden brown.
- Garnish with oregano leaves and serve with a salad.
