How to make it

  • Preheat oven to 200 degrees celcius
  • Cook gnocchi in a large pan of boiling salted water for 3 minutes, or until tender. Drain well. Spoon hot gnocchi into six greased ovenproof dishes. Place on an oven tray.
  • Heat oil in a large frying pan. Add garlic & cook until soft. Stir in puree, sugar and salsa. Bring to boil. Simmer uncovered for 5 minutes, or until sauce is slightly thickened. Stir in oregano and season with salt/pepper.
  • Spoon tomato mixture over gnocchi in dishes. Spread bocconcini over tops.
  • Cook uncovered in a hot oven for 20 minutes, or until tops are golden brown.
  • Garnish with oregano leaves and serve with a salad.
