Gnocchi Bakes Recipe
This is a quick and easy one and is a different spin on the usual gnocchi out of a packet.

Ingredients
  • 2 x 500g packets fresh gnocchi
  • 1 tblsp olive oil
  • 2 cloves garlic, finely chopped
  • 400g can tomato puree
  • 2 tsps caster sugar
  • 1 cup bottled roasted capsicum salsa
  • 1 tblsp chopped fresh oregano
  • salt and pepper to taste
  • 180g tub baby bocconcini, drained and sliced
  • Extra oregano to garnish
  • Salad to serve

Directions
  1. Preheat oven to 200 degrees celcius
  2. Cook gnocchi in a large pan of boiling salted water for 3 minutes, or until tender. Drain well. Spoon hot gnocchi into six greased ovenproof dishes. Place on an oven tray.
  3. Heat oil in a large frying pan. Add garlic & cook until soft. Stir in puree, sugar and salsa. Bring to boil. Simmer uncovered for 5 minutes, or until sauce is slightly thickened. Stir in oregano and season with salt/pepper.
  4. Spoon tomato mixture over gnocchi in dishes. Spread bocconcini over tops.
  5. Cook uncovered in a hot oven for 20 minutes, or until tops are golden brown.
  6. Garnish with oregano leaves and serve with a salad.
