How to make it

  • Mix starter and yeast (if using) in a large bowl. Add brown sugar and apple butter and stir to combine well.
  • Add flours, oats, salt, spice and gluten and knead for 5 minutes. Let lest 5 minutes.
  • Add butter and vanilla and knead for 7-10 minutes.
  • Place in a greased bowl, turning to coat.
  • Cover and allow to rest 1 hour.
  • Knead in the raisins, pecans and seeds, place back into the bowl See Photo. Recover and allow to rest 1 hour. See Photo
  • Shape into a loaf and place into a greased loaf pan. Cover and allow to rise 5 hours.
  • Preheat oven to 350F.
  • Bake loaf 45 minutes. Turn out of the pan immediately and cool completely on a rack before slicing.
