How to make it

  • Cook Yellow Rice as instructed on the pack
  • While it cooks, let's start the Chorizo. (all done on a low flame)
  • Chop up onion
  • Sauté in the onions until golden
  • Add Chorizo and continue to sauté
  • Cut up squash in bigger pieces and add to the pan
  • Cut up Tomatoes in bigger pieces and add to the pan
  • add spices
  • Let it simmer
  • Once the rice is almost complete:
  • Add chopped up pieces of sun-dried tomatoes
  • Add diced scallions
  • Serve with Garnish on the side
  • Feel free to replace the sun-dried tomatoes with other options
  • Enjoy !

    Vegan chorizo? What is that, like tofu or something? I'll look into it but I might just make this with black or kidney beans instead. Otherwise this looks slammin'.
