How to make it

  • Preheat the oven to 220C/hot. Grease a small roasting tin with the oil and put the sausages in it, leaving a small gap between each. Cook in the oven for 15 minutes or until they just start to brown.
  • Meanwhile sift the flour into a bowl with a good pinch of salt. Make a well in the centre and break in the egg. Add the mustard and a splash of milk and mix with a wire whisk to make a thick batter. Gradually whisk in the rest of the milk. Add the thyme and season with pepper.
  • Remove the sausages from the oven and immediately pour over the batter. Return to the oven for 30-35 minutes
