Toad In The Hole

- 1tsp sunflower oil shopping list
- 454g 16 oz pack Reduced-fat Pork Sausages or full fat sausages shopping list
- 115g 1 cup plain flour shopping list
- 2 large free-range eggs shopping list
- 1 level tbsp Coarse Grain Mustard shopping list
- 275ml 1 1/8 cups skimmed milk or full-fat milk shopping list
- 2 level tsp chopped fresh thyme leaves or ½ level tsp dried thyme or mixed herbs shopping list
How to make it
- Preheat the oven to 220C/hot. Grease a small roasting tin with the oil and put the sausages in it, leaving a small gap between each. Cook in the oven for 15 minutes or until they just start to brown.
- Meanwhile sift the flour into a bowl with a good pinch of salt. Make a well in the centre and break in the egg. Add the mustard and a splash of milk and mix with a wire whisk to make a thick batter. Gradually whisk in the rest of the milk. Add the thyme and season with pepper.
- Remove the sausages from the oven and immediately pour over the batter. Return to the oven for 30-35 minutes
