How to make it

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut a 1/2 inch crisscross on the flat side of each nut. Be sure to cut through the shell to prevent the nut from exploding.
  • Place the nuts in a shallow baking pan and bake for 25 to 30 minutes.
  • Allow to cool and peel off the shell.
  • Place nuts in a skillet with butter and saute over high heat until the butter is melted and the chestnuts are well coated. Place skillet in oven and roast until they are golden on top. Sprinkle with salt and cinnamon.

    Had some troubles with my chestnuts. I may have cut the "X" in the shell too deeply. When I tried to peel the shell off the nuts came apart. I was using an Asian variety of chestnut. Any tips?

    I'm interested in trying this recipe particularly because it adds at the end roasting them in butter and sprinkling with cinnamon. My concern with the other recipes is that they sound simply bland. My chestnuts are roasting in the oven now. I may try a little nutmeg and may experiment with rolling them in some caramelized and melted sugar. I'll report back in a few.
