How to make it

  • Melt butter in 13x9" pan in 400F oven, about 3 mins, then take out.
  • Meanwhile, combine cheese and breadcrumbs in bowl or bag.
  • Beat egg with soy sauce in a shallow dish.
  • Dip chicken breasts in egg mixture, and then in crumb mixture.
  • Place skin side down in baking pan, leaving spaces between.
  • Bake 20 mins, then turn and bake another 20-25 mins or until the juices run clear.

    Grandman use to make a Parmesan Chicken that she used crushed cracker crumbs as the coating...called it her 'Company Dish'
    I use it to this day and think of her each time I make it.
    Thank-you for this flash back today,of a warm memory.
