How to make it

  • 1. In a small skillet, saute the onion in oil until tender.
  • 2. Add the zucchine, tomatoes, green pepper, garlic, salt and pepper.
  • 3. Reduce heat and simmer uncovered for 8-10 minutes or until vegetables are tender.
  • 4. Sprinkle with parmesan cheese and parsley.
  • I baked mine in the oven on 350 F for about 30-45 minutes
