Zucchini Provencal

- 1 medium onion shopping list
- 1 tablespoon olive oil shopping list
- 1 large zucchini, cubed shopping list
- 2 plum tomatoes, peeled, quartered and chopped shopping list
- 2 tablespoons green pepper shopping list
- 2 garlic cloves, minced shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1 tablespoon grated parmesan cheese shopping list
- 2 teaspoons fresh parsley shopping list
How to make it
- 1. In a small skillet, saute the onion in oil until tender.
- 2. Add the zucchine, tomatoes, green pepper, garlic, salt and pepper.
- 3. Reduce heat and simmer uncovered for 8-10 minutes or until vegetables are tender.
- 4. Sprinkle with parmesan cheese and parsley.
- I baked mine in the oven on 350 F for about 30-45 minutes
