Pint-size Paella

- 4 (1/2 lb) skinless boneless chicken breasts, halved shopping list
- 2 small onion, chopped shopping list
- 2 large garlic cloves, crushed through a press shopping list
- 1 1/2 tsp paprika shopping list
- 1/2 tsp salt shopping list
- 1 1/2 cup low sodium chicken broth shopping list
- 1 can artichoke hearts, quartered shopping list
- 1/2 lb fresh green beans, trimmed shopping list
- 2 2/3 cup brown rice, cooked shopping list
- 2/3 cup roasted red bell pepper, cut into thin strips shopping list
How to make it
- Preheat oven to 425.
- Spray 13"x9" baking dish with cooking spray.
- Spray large skillet with cooking spray.
- Add chicken and cook over medium heat until browned, about 3 min.
- Turn chicken.
- Sprinkle onions around chicken. Cook, stirring onions, until chicken is browned, about 3 min.
- Stir in garlic, paprika and salt.
- Add broth and bring to boil, scraping up browned bits from bottom of skillet.
- Stir in artichokes; cover and simmer 10 min.
- Stir in green beans; cover and simmer until the vegetables are tender 8-10min.
- Stir in rice and roasted peppers.
- Put mixture into prepared baking dish.
- Bake until bubbling 8-10 min.
