How to make it

  • 1. In medium mesh sieve, over bowl, pour strawberry filling. Let stand 10 to 15 minutes until most of the filling drains into bowl. Set strawberries aside.
  • 2. In large bowl of electric mixer, add cake mix, chocolate pudding mix, eggs, and vegetable oil.
  • 3. Measure pie filling that has drained through sieve (about 1 cup). Add 1/2 cup water to pie filling; mix well. Add to cake mix. Continue with cake as directed, making two 8- or 9-inch round cake layers.
  • 4. Cool layers on wire cooling rack for 10 minutes; remove from pans. Let cake cool to room temperature. (Cakes may be made ahead of time and placed in refrigerator or freezer until ready to use.)
  • 5. Place whipping cream, confectioners’ sugar and vanilla in large bowl of electric mixer. Beat 2 to 3 minutes or until soft peaks form. Gently fold reserved strawberries into mixture.
  • 6. Place one cake layer on large plate; spread whipped cream mixture to within ½ inch of edge. Place second layer on top. Using frosting, cover sides of cake then top. Refrigerate until serving. Refrigerate leftovers.
  • ***Notes for the Purists out there..
  • You do not have to use a store-bought frosting. You can make a ganach, let it cool to room temperature and then use that as a frosting or just drizzle the ganache glaze over the top of the cake after layered and chill. You can also frost the entire cake in your favorite buttercream recipe.
  • If you never use pie fillings, you can use your favorite strawberry jam, fresh berries or even frozen, sweetened with your choice of sweetner.
  • **Sprinkling the cake LIGHTLY with a strawberry liqueur will add a little kick to your dessert. (Or perhaps a bit of Grand Marnier?)
