How to make it

  • Pulse carrot, celery and onion in a food processor until finely chopped.
  • Melt butter over medium high heat, add veggies and cook 7 minutes.
  • Add flour and cook, stirring constantly, for 4 minutes. Lower heat to medium.
  • Whisk in broth, lemon juice, salt and pepper, simmer for 13 minutes.
  • Strain well and serve.

    I've used this recipe the last two years and was just looking at it again while thinking about planning my Thanksgiving menu. The subtle flavors of the aromatic vegetables and lemon juice in the gravy is a complement to both the turkey and the potatoes, surprisingly. The first year I made traditional gravy too, just in case, but this gravy was the one everyone went for.
