How to make it

  • 1. Preheat oven to 450 degrees.
  • 2. Line a baking sheet with parchment paper or a Sil-pat.
  • 3. Place chicken breasts between waxed paper or cling wrap and pound until thin.
  • 4. In one bowl, mix Wheat flour, ½ tsp salt, ½ tsp garlic powder, ½ tsp pepper and stir.
  • 5. Place egg whites in a second bowl and beat lightly.
  • 6. In a third bowl, mix Flax meal, fresh Parmesan, ½ tsp pepper, ½ tsp salt and Italian Seasoning.
  • 7. Dip chicken in flour, then egg whites, then Flax meal. Make sure to coat both sides.
  • 8. Place on the baking sheet and repeat with remaining chicken.
  • 9. Put chicken in pre-heated oven for 25 minutes.
  • 10. Remove from oven, top each with 2 TBS tomato sauce and 2 TBS Mozzarella.
  • 11. Place back in the oven for 5 minutes to heat the cheese and warm the sauce.
  • 12. Place under broiler for 1 minute if you wish to brown the cheese.
