Harvest Strudel

- 1/2 of a package of frozen puff pastry, defosted according to package directions shopping list
- 2 large granny smith apples, peeled, cored, and thinly sliced shopping list
- 1/3 cup of dried cranberries soaked in one and a half tablespoons of applejack and then drained shopping list
- zest of one orange shopping list
- 2 tablespoons of granulated sugar shopping list
- 4 teaspoons of all purpose flour shopping list
- 1/4 teaspoon of ground cinnamon shopping list
- 1/8 teaspoon of fresh grated nutmeg shopping list
- pinch of salt shopping list
- 1 egg shopping list
- 1 tbsp. of water shopping list
- 3/4 cup of milk shopping list
- 1/2 cup of cream shopping list
- 1/3 cup of sugar shopping list
- 1 split vanilla bean shopping list
- 4 egg yolks shopping list
- 1 tbsp of apple jack shopping list
How to make it
- Heat oven to 375 degrees.
- Mix flour, sugar, cinnamon, nutmeg, pinch of salt together.
- Toss apples, cranberries, orange zest together until well coated.
- Beat whole egg with water. Set aside.
- Unfold pastry sheet on a lightly floured surface.
- Roll out to a 16 x 12 rectangle.
- Put apple filling on the bottom half of the pastry sheet.
- Roll up like a jelly roll.
- Place a seamside down on a parchment lined cookie sheet,
- Tuck under the ends.
- Brush top with beaten egg/water.
- Bake 35 minutes,
- Cool 30 minutes.
- Whisk egg yolks and sugar with applejack.
- Combine milk.cream in a large glass bowl over a pot of boiling water.
- Heat and whisk over water bath until thick and foamy.
- Do not scramble the eggs. Gently heat to cook the custard.
- Add in scraped vanilla seeds from pod. Alternately stir in a 1.2 teaspoon of vanilla to perfume the custard.
- Slice and serve with a puddle of custard.
