This is a easy recipe for corn bread.

Ingredients
  • 2 1/3 c. of flour
  • 1 c. of cornmeal
  • 4 1/2 tsp. of baking powder
  • 2/3 c. of butter, softened
  • 1 c. of sugar
  • 3 eggs
  • 1 1/3 c. of skim milk
  • 1 tsp. of salt

Directions
  1. First you want to mix together the butter and sugar.
  2. Now add the eggs and milk.
  3. Then you can add in the dry ingredients.
  4. Now grease a 13X9 dish.
  5. Bake this in a 400 degree oven approx. 22-27 min(toothpick should come out clean.
  6. Serve.

13 X 9 dish seems a little big but it is in the oven. Only took 15 minutes to cook. Cooling. Think a smaller dish would have made a taller cornbread and the time would have come out right.

Taste is not a stand me on my ear wonderful but has the cornbread taste. It is a little more cake like than cornmeal like because of the ratio of all-purpose flour and the amount of eggs. It is sweet enough for mother's taste. Yeah! That's right! She loves her sugar!
