How to make it

  • 1. Make your crepes (recipe already posted on my page)
  • 2. Combine mushrooms, carrot, leek and water and heat to boiling.
  • 3. Reduce heat cover and simmer for 5 minutes. Do not drain.
  • 4. Combine milk, cornstarch, salt and pepper and then stir into the vegetable mixture.
  • 5. Cook and stir until thickened and bubbly, then add the sherry and 1/2 cup of the cheese and stir until the cheese is melted.
  • 6. For the filling of the crepes combine spinach, chicken and 1 cup of the sauce and spoon 1/4 cup of the filling onto unbrowned side of the the crepes.
  • 7. Roll up and spoon remaining sauce over crepes.
  • 8. Cover bake in a 375 degree oven for 25 minutes or until hot. Sprinkle with remaining cheese. Bake uncovered 5 minutes more.
