Chicken & Spinach Crepes

- 2 cups sliced fresh mushrooms shopping list
- 1/2 cup shredded carrot shopping list
- 1/2 cup sliced leek or green onions shopping list
- 1/2 cup water shopping list
- 3/4 cup evaporated milk shopping list
- 2 tablespoons cornstarch shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 2 tablespoons sherry shopping list
- 1 cup shredded cheddar cheese (4 ounces) shopping list
- 1 10-ounce package frozen chopped spinach, thawed and well drained. shopping list
- 2 cups fineld chopped chicken or turkey shopping list
How to make it
- 1. Make your crepes (recipe already posted on my page)
- 2. Combine mushrooms, carrot, leek and water and heat to boiling.
- 3. Reduce heat cover and simmer for 5 minutes. Do not drain.
- 4. Combine milk, cornstarch, salt and pepper and then stir into the vegetable mixture.
- 5. Cook and stir until thickened and bubbly, then add the sherry and 1/2 cup of the cheese and stir until the cheese is melted.
- 6. For the filling of the crepes combine spinach, chicken and 1 cup of the sauce and spoon 1/4 cup of the filling onto unbrowned side of the the crepes.
- 7. Roll up and spoon remaining sauce over crepes.
- 8. Cover bake in a 375 degree oven for 25 minutes or until hot. Sprinkle with remaining cheese. Bake uncovered 5 minutes more.
