How to make it

  • 1. In a skillet, saute peppers and onion in 4 tablespoons butter until tender.
  • 2. Stir in the soft bread crumbs, corn and eggs, and put in a greased 8 inch baking dish.
  • 3. Melt the remaining butter and toss with bread crumbs and sprinkle over the casserole.
  • 4. Bake, uncovered at 350 degrees for 25-30 minutes or until bubbly.
