How to make it

  • 1. Preheat oven to 325 degrees F.
  • 2. Put sweet potatoes in a saucepan with water to cover.
  • 3. Cook over medium high heat until tender, drain and mash
  • 4. In another bowl mix together the sweet potatoes, sugar, eggs, salt, butter and vanilla, mix until smooth.
  • 5. Transfer to a baking dish.
  • 6. In another bowl mix the sugar and the flour. Cut in the butter until the mixture is coarse, stir in the pecans (optional).
  • 7. Sprinkle the mixture over the sweet potato mixture.
  • 8. Bake in the preheated oven for 30 minutes ir until the topping is lightly brown.
