Sweet Potato Casserole

- 4 cups sweet potatoes cubed shopping list
- 1/2 cup white sugar shopping list
- 2 eggs beaten shopping list
- 1/2 teaspoon salt shopping list
- 4 tablespoons butter, softened shopping list
- 1/2 cup milk shopping list
- 1 teaspoon vanilla extract shopping list
- Topping shopping list
- 1/2 cup packed brown sugar shopping list
- 1/3 cup all purpose flour shopping list
- 3 tablespoons butter, softened shopping list
- 1/2 cup chopped pecans (optional) shopping list
How to make it
- 1. Preheat oven to 325 degrees F.
- 2. Put sweet potatoes in a saucepan with water to cover.
- 3. Cook over medium high heat until tender, drain and mash
- 4. In another bowl mix together the sweet potatoes, sugar, eggs, salt, butter and vanilla, mix until smooth.
- 5. Transfer to a baking dish.
- 6. In another bowl mix the sugar and the flour. Cut in the butter until the mixture is coarse, stir in the pecans (optional).
- 7. Sprinkle the mixture over the sweet potato mixture.
- 8. Bake in the preheated oven for 30 minutes ir until the topping is lightly brown.
