Kitchen Sink Cookies

- 1 Cup (2 sticks) unsalted butter, room temperature shopping list
- 3/4 Cup brown sugar, firmly packed shopping list
- 1 Cup Granulated sugar shopping list
- 2 eggs, lightly beaten shopping list
- 1 tsp vanilla extract shopping list
- 2 1/2 Cups AP flour shopping list
- 2 Cups Old Fashioned or instant oatmeal, uncooked shopping list
- 1 tsp baking powder shopping list
- 1 tsp cinnamon shopping list
- 1/2 tsp Salt shopping list
- 1 Cup dried cranberries shopping list
- 1/2 Cup raisins (optional) shopping list
- 1/3 Cup dried currants (optional) shopping list
- 1/4 Cup coconut (optional, but it adds awesome) shopping list
- 1/4 Cup dried apricots, chopped (optional) shopping list
- You can even put chopped nuts and/or butterscotch chips up in there if you want. It's your cookie, make it a party! shopping list
How to make it
- In a large mixing bowl, mix the brown and white sugars and the butter until creamy. Add the beaten eggs and vanilla, mix well. Stir in the flour, baking powder, salt, cinnamon and oatmeal. Mix until the dough forms. Add whatever dried fruit, coconut and/or chopped nuts you want and mix again until even.
- Cover with plastic wrap and shove it in the fridge to set for at least 45 minutes to an hour. Overnight too, if you're preparing ahead.
- When you're ready, preheat oven to 350 F.
- Place cookies on parchment or ungreased cookie sheet about 2 inches apart. (See my last recipe for a trick to make them rounded.) Bake them at 350 F for 12 - 15 minutes until golden brown.
- Let cool for a few minutes and eat as many of them as you can fit with a giant glass of milk.
- Gain 12 thousand pounds, donate all your skinny clothes to charity.
