- 1 Tablespoon coriander Seed...Do the same shopping list
- 1 Tablespoon peppercorns shopping list
- 3/4 Cup thyme leaves...Make it fresh Thyme shopping list
- 1 Cup brown sugar shopping list
- 3 oranges...halved shopping list
- 1 Onion...Cut into thick slices shopping list
- 5 cloves garlic...Crush it shopping list
- 4...12oz pork chops...of the best quality you can find shopping list
- ~ Rub ~ shopping list
- 1 Tablespoon coriander seeds...toast em' up shopping list
- 1 Tablespoon fennel seeds...Same shopping list
- 1 Tablespoon chili powder...test the brand and heat to your likin' shopping list
- 1 Tablespoon paprika shopping list
- 1 Tablespoon pepper shopping list
- 2 teaspoons salt...Kosher shopping list
- 1/4 Cup brown sugar shopping list
- ~ Slaw ~ shopping list
- 4 granny smith apples...cored and julienned shopping list
- 1 Cup Red Globe grapes,halved shopping list
- 1/2 fresh lemon...Juice of shopping list
- 1/2 Cup walnuts in pieces...nicely toasted shopping list
- 3 green onions,finely chopped...top to bottom shopping list
- 2 Tablespoon flat leaf parsley...chopped fine shopping list
- Fresh ground sea salt,and black pepper shopping list
- 3/4 Cup Creamy blue cheese dressing shopping list
How to make it
- ~ Mixing Brine ~
- Bring 4 cups of the water to a good simmer,add the salt,bay leaves,fennel seeds,coriander seeds,pepper,thyme,and sugar,whisk briskly,and simmer until the salt has dissolved.
- Add the oranges,onion,garlic,and the rest of the water.
- Add the pork chops to the brine and place a plate on top of them to keep them submerged.
- Place in a cool place,outdoors if cold enough or in the refrigerator about 8 hours will do quite nicely.
- After that time,remove chops from brine,scrape off any of the spice,and pat dry.
- Discard the brine and place the chops aside,cover in saran wrap and chill until your ready to grill.
- ~Mixing your Rub a Dub Dub ~
- Mix all ingredients together...fire up the grill,coat the brined chops in the rub.
- ~ See to your Slaw ~
- Toss apples with the citrus juice.
- Mix remaining ingredients together with the apples,adjust seasonings to your liking.
- Cover and keep cool until ready to serve.
- ~ Taking Care of the Chops ~
- Grill them on each side for about 4 minutes(or) until the internal temperature is correct.
- Make sure the chops are'nt to close to the coals,for the sugar may cause the flame to flare.
- After cooking,allow them to rest a spell to bring all the juices to the center.
- Serve with Hot Rolls,Cowboy Coffee,and a couple shots of good Whiskey, Warm Cherry Cobbler for dessert with a scoop of Vanilla Ice Cream,or,Whipped Cream,or,Just Plain,it's all the same...Mighty Good.
