Melting Chocolate Moments

- 100g butter cubed, plus extra for greasing shopping list
- 10g plain flour for dusting shopping list
- 4 eggs shopping list
- 75g caster sugar shopping list
- 50g ground almonds shopping list
- 100g dark chocolate broken into small peices shopping list
How to make it
- preheat oven to 200oC. grease 4 individual moulds, 8-10cm in diameter, with butter and dust them with flour.
- whisk the eggs with the sugar in a mixing bowl until the mixture becomes lighter in colour. add the ground almonds, whisking until smooth.
- melt the chocolate with the butter in a small, thick bottomed saucepan over a low heat. remove from the heat and stir vigorously until the mixture is shiny.
- add the melted chocolate and butter to the egg and almond mixture. stir with a wooden spoon to combine thoroughly.
- divide the chocolate mixture between the moulds. tap the moulds on the bench top to remove any air, then transfer to the oven for 8-10mins, until just firm on the outside but still gooey inside.
- remove the moulds from the oven. allow to cool a little then gently turn out the cakes onto serving plates. serve warm and enjoy your melting chocolate moment =)
