How to make it

  • Melt the butter in your scalded milk. Next soak the bread crumbs in the milk/butter. Add the YOLKS of the 2 eggs. Mix well. Sift the flour, baking powder, salt and sugar into the bread crumb mixture.
  • Beat the egg WHITES into stiff peaks. Now gently fold egg whites into bread crumb mixture.
  • Drop large spoon fulls onto a greased hot griddle. Cook until golden brown on both sides. Serve with butter and syrup, a fried egg, or what ever your little heart desires.
  • ( I put the milk and butter in a microwave safe bowl. Heat in the microwave 1 minute at a time until I can see it begin to foam. This is microwave scalding. Takes me only about 2 minutes this way.)
