While searching for apple butter, I ran into sweet Mountainmama's "Apple Butter Muffins" which I bookmarked. Mountainmama was a sensitive and sweet soul, and she lived in "Heaven" West Virginia. Read more When I was very new to GR, I asked her "why do you post SO Many recipes?" She replied, "Cancer is causing so much pain in my back and all over," and she posted recipes from magazines to try to relieve her intense discomfort. Ingredients
- Preheat oven at 375* F shopping list
- 1 cup all purpuse flour shopping list
- 1/2 cup whole wheat pastry flour shopping list
- 1/4 cup oatmeal shopping list
- 1/3 cup brown sugar shopping list
- 1 Tablespoon pumpkin pie spice (jo.jo-ba's) shopping list
- 2 teaspoons cinnamon shopping list
- 1/4 t. salt shopping list
- Combine the dry ingredients in a medium bowl. shopping list
- In a small bowl, mix together : 1/4 cup "eggbeaters" type product shopping list
- 3/4 cup soy milk shopping list
- 3 Tablespoons olive oil, shopping list
- Add to dry ingred. and mix Just until moistened. Spoon into a greased 9 inch cake pan. or 12 count muffin tin. Top batter with 1/2 cup homemade apple butter, and sprinkle2 Tablespoons chopped nuts or about 2 Tablespoons coconut on top of apple butter. Bake at 375 degrees farhenheit about 30 mins. or until toothpick comes out clean. elevate pan to cool, and enjoy! shopping list
