How to make it

  • Brush the bottom surface of the pie shell with egg white and put into a 450F oven for 5 or 6 minutes. Remove pie shell and reduce heat to 375.
  • Beat eggs until light and fluffy. Mix in everything else except the nuts and chocolate chips. NOTE: If you are using salted macadamia nuts leave out the salt.
  • Fill the pie shell with the nuts and chocolate chips. Then pour the filling over it and jiggle to release air bubbles.
  • Bake about 45 minutes, until a knife about halfway between the edge and the center comes out clean. Chill for a couple hours.
  • Just before serving whip the cream until soft peaks form. Sprinkle in the sugar and vanilla and whip a bit more until it mounds up well. Serve a big dollop on each slice of pie.
