Lobster Bisque

- 1/3 c olive oil shopping list
- 1 med. onion,diced shopping list
- 6 celery stalks,diced shopping list
- 4 cloves garlic,minced shopping list
- 1/4 c brandy shopping list
- 1/4 c sherry shopping list
- 1 tsp salt shopping list
- 1-1/2 tsp tarragon shopping list
- 1/2 tsp cayenne shopping list
- 2 bay leaves shopping list
- 1/4 c tomato paste shopping list
- 1/2 tsp pepper shopping list
- 1-1/2 tsp paprika shopping list
- 1 tsp thyme shopping list
- 1/3 c lobster base shopping list
- 1 gal. water shopping list
- 1/2 lb butter shopping list
- 1-1/2 c flour shopping list
- 1-1/4 c heavy cream shopping list
- 1/4 c milk shopping list
- 1 lb. cooked lobster meat shopping list
How to make it
- In large stockpot,heat olive oil. Saute onion,.celery,and garlic for 5 mins.
- Add sherry and brandy and cook for 1 min.
- Add salt,tarragon,cayenne,bay leaves,tomato paste,pepper,paprika,thyme and lobster base;cook for 1 min. Add the water
- In seperate saucepan make a roux by melting butter,then adding flour and stirring till smooth.
- Once water is boil,add roux ansd stir till there are no lumps.
- Strain soup mixture into a large soup tureen.
- Add the heavy cream,milk and lobster meat to mixture.
- Stir well and serve
