How to make it

  • In large stockpot,heat olive oil. Saute onion,.celery,and garlic for 5 mins.
  • Add sherry and brandy and cook for 1 min.
  • Add salt,tarragon,cayenne,bay leaves,tomato paste,pepper,paprika,thyme and lobster base;cook for 1 min. Add the water
  • In seperate saucepan make a roux by melting butter,then adding flour and stirring till smooth.
  • Once water is boil,add roux ansd stir till there are no lumps.
  • Strain soup mixture into a large soup tureen.
  • Add the heavy cream,milk and lobster meat to mixture.
  • Stir well and serve
