Healthy & Tasty Kale Stir Fry

- Amounts on this aren't too specific, and that's fine! shopping list
- 5-6 huge washed kale leaves, including stems. Slice stems in half or thirds, length-wise. shopping list
- half head cabbage, sliced and coarsely chopped shopping list
- 1 small onion, sliced shopping list
- 1 green pepper, thinly sliced shopping list
- 1 red pepper, thinly sliced shopping list
- handful frozen, shelled edamame shopping list
- 2 garlic cloves, chopped shopping list
- low-sodium teriyaki sauce shopping list
- OPTIONAL, ANY OR ALL: shopping list
- 1/2 cup sliced fresh mushrooms shopping list
- 1/4 cup slivered almonds shopping list
- 1-2 diced chicken breasts (if used, start these first) shopping list
How to make it
- To wok or large non-stick skillet, add 1 teaspoon olive oil and non-stick cooking spray. Add onions and peppers and frozen edamame and stir fry on high for a minute or two. Add rest of vegetables and continue cooking on medium-high heat, for a few minutes, until veggies start to cook down. When almost done, add a splash of the teriyaki sauce and continue cooking another minute or so. Voila!
