How to make it

  • To wok or large non-stick skillet, add 1 teaspoon olive oil and non-stick cooking spray. Add onions and peppers and frozen edamame and stir fry on high for a minute or two. Add rest of vegetables and continue cooking on medium-high heat, for a few minutes, until veggies start to cook down. When almost done, add a splash of the teriyaki sauce and continue cooking another minute or so. Voila!

    Looks fabulous. Kale is one of my all time favorite vegetables. It is very versatile like spinach but with more attitude. I would not leave the stems in as they are very tough and tend to be bitter. But that's just me. Great post.
