Pork Terriyaki

- Pork: shopping list
- 2 TB light terriyaki sauce shopping list
- 4 cloves garlic,chopped shopping list
- juice and zest of 1 lime shopping list
- 1 lb pork tenderloin shopping list
- Sauce: shopping list
- 1 can (14.5 oz) low-sodium chicken broth shopping list
- 3 TB light terriyaki sauce shopping list
- 4 TB cornstarch shopping list
- 1 tsp sugar shopping list
- 3/4 tsp hot sauce shopping list
- vegetables shopping list
- 2 TB vegetable oil shopping list
- 1 large onion,peeled and thinly sliced shopping list
- 1 red pepper,seeded and sliced shopping list
- 8 oz sliced mushrooms shopping list
- 1 bunch scallions,trimmed,cut in 1" pieces shopping list
- 1 bag (12 oz) microwave-ready green beans,cooked following instructions shopping list
- 3 c white or brown rice. shopping list
How to make it
- Pork:n large ziploc bag,combine terriyaki sauce,garlic,lime juice and zest. Add pork and marinate in refrigerator 2 hours.
- Sauce: In small bowl,combine chicken broth,terriyaki sauce,cornstarch,sugar and hot sauce. Set aside.
- Vegetable: Remove pork from marinade and discard marinade. Cut pork in 1/2" slices. Heat 1 TB oil in large non-stick skillet over med-high heat. Stir fry pork for 3 mins. Remove from skillet and keep warm.
- dd remaining TB of oil to skillet. Add onion and cook 4 mins;stir in red pepper,mushrooms and scallions. Cook 3 mins. Stir in green beans,broth mixture and pork. Simmer for 2 mins,until thickened.
- Serve over white or brown rice.
