How to make it

  • Use 3 separate large pots, one for chicken, one for the pork and beef, and one for the oxtail, cow-heel and salt beef. Add all ingredients listed for each pot, cover contents with water and bring to a boil. Simmer until the meat starts to soften and the sauce thickens.
  • Pots 1 and 2 will finish first. Pot 3 will take a little longer approximately, 1 1/2 hours for the chicken, 1 3/4 hours for the pork and beef, and approximately 2 hours for the oxtail, cow-heel, and salt beef.
  • Once each pot is done, remove from heat and remove thyme from the pot. When the meats have cooled, combine the contents from all 3 pts into one pot. Mix well and adjust seasoning if necessary.
