- Pot 1: shopping list
- 1 whole chicken (about 2 1/2 lbs), cut into pieces shopping list
- 1/2 cup cassareep shopping list
- 2 whole hot peppers shopping list
- 1/3 bunch fresh thyme shopping list
- 1 tbs whole cloves shopping list
- 1 tbs Chinese five spice shopping list
- 2 tbs italian seasoning shopping list
- 4 large onions, chopped shopping list
- 1 tbs salt shopping list
- 2 tbs sugar shopping list
- Pot 2: shopping list
- 2 lbs pork (cheap braising cut such as leg or shoulder) shopping list
- 2 lbs pounds beef clod or shoulder shopping list
- 1/2 cup cassareep1/2 cup cassareep shopping list
- 2 whole hot peppers shopping list
- 1/3 bunch fresh thyme shopping list
- 1 tbs whole cloves shopping list
- 1 tbs Chinese five spice shopping list
- 2 tbs italian seasoning shopping list

- Pot 3: shopping list
- 2 lbs oxtail shopping list
- 2 pounds cow heel (also called neat's foot) shopping list
- 1/2 lb salt beef shopping list
- 2 whole hot peppers shopping list
- 1/3 bunch fresh thyme shopping list
- 1 tbs whole cloves shopping list
- 1 tbs Chinese five spice shopping list
- 2 tbs italian seasoning shopping list
- 4 large onions, chopped shopping list
- 1 tbs salt shopping list
- 2 tbs sugar shopping list
How to make it
- Use 3 separate large pots, one for chicken, one for the pork and beef, and one for the oxtail, cow-heel and salt beef. Add all ingredients listed for each pot, cover contents with water and bring to a boil. Simmer until the meat starts to soften and the sauce thickens.
- Pots 1 and 2 will finish first. Pot 3 will take a little longer approximately, 1 1/2 hours for the chicken, 1 3/4 hours for the pork and beef, and approximately 2 hours for the oxtail, cow-heel, and salt beef.
- Once each pot is done, remove from heat and remove thyme from the pot. When the meats have cooled, combine the contents from all 3 pts into one pot. Mix well and adjust seasoning if necessary.
