How to make it

  • 1.Line a baking tray with parchment paper.
  • 2.Preheat oven @100c (on very lowe heat).
  • 3.Whip the egg whites with some vanilla essence till it turns white.
  • 4. then start adding the sugar in parts and continue beating till all of the sugar is incorporated and you get stiff peaks. a good sign to check whether you've beaten well is to upturn the bowl of eggwhites and see,the mixture should stick to the bowl and not drip.
  • 5.Gently fold in the broken cashews and take a tablespoonful and drop individually on the baking tray keep 1 inch of distance between 2 cookies
  • 6.Bake on very low heat for 45 mins.then turn it off and let the meringues stay in the oven for another hour .gently remove from the tray and cool completely over a wire rack.
