Bait And Tackle Salad Recipe
Fresh summer vegetables and "kicked up" with a sweet and tangy vinaigrette. Easy to make and yummy.

Ingredients
  • 2 Cups Grape or Cherry Tomatoes
  • 2 small Zucchini, coarsley chopped
  • 2 small Yellow Summer Squash, coarsley chopped
  • 2 Tablespoons minced Fresh Cilantro (may be omitted)
  • 5 Tablespoons white wine vinegar
  • 3 Tablespoons Sugar
  • 1 teaspoon Dijon Mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 Tablespoons Olive Oil

Directions
  1. In a large bowl, combine the tomatoes, zucchini, yellow squash and cilantro.
  2. In a blender, combine the vinegar, sugar, mustard, salt and pepper.
  3. While processing, gradually add oil.
  4. Drizzle over vegetables, toss to coat.
  5. Cover and refrigerate for 30 minutes.
  6. Serve.
