How to make it

  • 1. Place 1 cookie on bottom of each of paper lined muffin cup, using the small paper cups
  • 2. Mix the coffee granules and water in a large bowl until coffee is dissolved.
  • 3. Add the sugar, cream cheese, vanilla and cinnamon.
  • 4. Beat with whisk until well blended.
  • 5. Stir in cool whip and blend well.
  • 6. Spoon into the muffin cups.
  • 7. Freeze 3 hours or until firm. Remove cheesecakes from freezer 10 minutes before serving.
  • 8. Grate some chocolate on the top and serve
