Ingredients

How to make it

  • chop onions and sauté until soft
  • add mushrooms See Photo
  • add minced garlic
  • add all of that to the cooked quinoa
  • mix butternut squash and kraut (or veggies)
  • spoon quinoa into the shells See Photo
  • sprinkle salt and spices onto quinoa
  • spoon the squash and kraut over that
  • pop that back into the oven at 350 for about 10 minutes to let everything mingle
  • enjoy!

    Thanks, ya'll. Raw kraut is any collection of lacto-fermented veggies that has not been pasteurized or otherwise sterilized (killing the wonderful lactobacillus that thrive, the same kind you see added to probiotic yogurt). I just found black quinoa last weekend at our local health food store. It cooks up so pretty!

    HI! I love your name!! what is " raw kraut?" this recipe sounds like a clear winner!!! thank you! who packages "black quinoa"? I have only seen "regular" and "red".
