How to make it

  • Bring pot of salted water to a boil.
  • While waiting for water to boil, place olive oil, garlic, onion, and rosemary in straight-sided saute pan over medium heat. Cook until golden stirring occasionally.
  • Add mushrooms and Italian seasoning and saute.
  • De-glaze pan with wine and let mushrooms simmer.
  • Add tortellini to boiling water and cook until finished.
  • Turn heat to med-low and add heavy cream. Let cream warm and stir in Parmesan and blue cheese.
  • Add pepper to taste.
  • Cook until thickened.
  • Drain tortellini and stir into Alfredo sauce.
  • Remove rosemary sprig before serving and garnish with remaining blue cheese.
