Fresh Mushroom Soup

- 1/3 C shallots chopped coarsely shopping list
- 8 oz. Shitake mushrooms shopping list
- 8 oz. oyster mushrooms shopping list
- 8 oz. button mushrooms shopping list
- 2-4 Tbsp butter shopping list
- flour, salt and pepper shopping list
- 14 ½ oz. can chicken broth shopping list
- 2 C ½ + ½ or light cream shopping list
How to make it
- Chop shallots, cut mushrooms into medium or large pieces (your choice).
- Sauté shallots and mushrooms in butter until tender.
- Stir in enough flour to absorb liquid.
- Season w/salt and pepper, stir in broth, cook until thickened and bubbly.
- Stir in ½ + ½, heat gently.
- Serve hot.
