Coconut Wild Rice With Cranberries And Pears

- 1 cup wild rice shopping list
- 1 cup long-grain brown rice shopping list
- 3 3/4 cups So Delicious coconut milk Beverage (I used Original) shopping list
- 1 cup dried cranberries shopping list
- 1 pear, diced shopping list
- 1/2 cup chopped pecans (optional) shopping list
How to make it
- Rinse wild rice in cold water and drain thoroughly.
- Place wild rice and brown rice in a large saucepan with the coconut milk, and bring to a boil.
- Reduce heat and simmer until rice is tender and milk is absorbed, about 45 minutes.
- Transfer to a large bowl and fold in cranberries, pear, and nuts (if using).
