Cajun Marinade for injection

- 2 T Hungarian paprika (HOT) shopping list
- 1 T cayenne pepper shopping list
- 1 T black pepper shopping list
- 1 T granulated garlic shopping list
- 2 t dry mustard shopping list
- 1 t roasted/ground cumin shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp oregano shopping list
- 1 1/2 T kosher or sea salt shopping list
- 1 T cajun or creole seasoning shopping list
- 3 T cayenne pepper sauce (like Lousiana hot sauce) shopping list
- 1 T worchestersire sauce shopping list
- 1/4 C cider vinegar shopping list
- 12 oz chicken stock shopping list
- 12 oz beer ( a bit more to drink, if you like...) shopping list
How to make it
- Place dry ingredients in a clean coffee grinder, and grind until very fine.
- Place liquid ingredients into a small saucepan and add the ground ingredients. Bring to a boil. After it boils, remove from heat and let it cool completely.
- Using a syring or with a large needle, inject the turkey every inch or so (especially into the breast meat). Do so 24 hours before cooking.
- After 24 hours, you can prepare the turkey however you like; deep fry, smoke, roast, etc...
