Tasty Thai Muffins

- 1 1/2 cups cooked purple rice (also called "forbidden rice") - about 2/3 cup dry shopping list
- 1/2 cup tahini (sesame seed butter) shopping list
- 1 egg shopping list
- juice and zest of 1 lime shopping list
- 2 tsp grated fresh ginger shopping list
- 1/4 cup honey shopping list
- 1/4 cup corn syrup shopping list
- 1/4 cup sugar shopping list
- 2/3 cup coconut milk shopping list
- 1/4 cup shredded coconut shopping list
- 1 cup flour shopping list
- 3/4 cup whole wheat flour shopping list
- 1 tbsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1 Ataufo (honey) mango, peeled and diced shopping list
How to make it
- Preheat oven to 400F, line 16 muffin cups with paper liners.
- In a large bowl, combine rice, tahini, egg, honey and milk.
- Stir in flours, baking powder and salt until just moistened.
- Bake for 15 - 20 minutes.
